  • 2½ lb bone-in turkey breast, skin on
  • 1½ tsp salt
  • 2 tsp unsalted butter, melted

Method

  1. Preheat the oven to 325°F (conventional).
  2. Remove the turkey breast from its packaging.
  3. Pat the turkey breast dry all over with paper towels; do not rinse it under running water.
  4. Slide your fingers between the skin and the meat to loosen the skin, keeping it attached at the edges.
  5. Rub 1½ tsp salt over the meat and under the loosened skin.
  6. Place the turkey breast skin-side up in a small roasting pan or 9x13-inch baking dish.
  7. Brush the skin with 2 tsp melted butter (vegetable oil works too).
  8. Do not add any water to the pan.
  9. Insert an oven-safe meat thermometer into the thickest part of the breast, not touching bone.
  10. Roast uncovered in the preheated 325°F oven for 1 hour to 1 hour 15 minutes.
  11. Baste with the pan drippings every 20 to 30 minutes while it roasts.
  12. Keep roasting until the thermometer reads 165°F or higher.
  13. Remove the turkey from the oven.
  14. Let the turkey rest 15 minutes before slicing.
  15. Slice the turkey breast against the grain.
  16. Serve.
