- •2½ lb bone-in turkey breast, skin on
- •1½ tsp salt
- •2 tsp unsalted butter, melted

- Preheat the oven to 325°F (conventional).
- Remove the turkey breast from its packaging.
- Pat the turkey breast dry all over with paper towels; do not rinse it under running water.
- Slide your fingers between the skin and the meat to loosen the skin, keeping it attached at the edges.
- Rub 1½ tsp salt over the meat and under the loosened skin.
- Place the turkey breast skin-side up in a small roasting pan or 9x13-inch baking dish.
- Brush the skin with 2 tsp melted butter (vegetable oil works too).
- Do not add any water to the pan.
- Insert an oven-safe meat thermometer into the thickest part of the breast, not touching bone.
- Roast uncovered in the preheated 325°F oven for 1 hour to 1 hour 15 minutes.
- Baste with the pan drippings every 20 to 30 minutes while it roasts.
- Keep roasting until the thermometer reads 165°F or higher.
- Remove the turkey from the oven.
- Let the turkey rest 15 minutes before slicing.
- Slice the turkey breast against the grain.
- Serve.
