  • 1 large eggs

Method

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl or large measuring cup, whisk together the milk and egg until blended, about 30 seconds.
  3. Whisk the oil into the milk mixture until blended, about 15 seconds.
  4. Pour the milk mixture into the flour mixture.
  5. Stir just until the batter comes together and no dry flour remains, about 30 seconds; a few small lumps are fine -- do not overmix.
  6. Heat a griddle or nonstick skillet over medium heat.
  7. Lightly coat the griddle with nonstick cooking spray.
  8. Pour ¼ cup of batter onto the hot griddle for each pancake.
  9. Cook for 1.5 to 2 minutes, until the top is covered with bubbles and the underside is browned.
  10. Flip each pancake.
  11. Cook for 1.5 to 2 minutes on the second side, until browned.
  12. Transfer the pancakes to a plate.
  13. Lightly re-coat the griddle with nonstick cooking spray between batches.
  14. Repeat with the remaining batter to make about 8 pancakes total.
  15. Serve immediately.
