Method

  1. In a mixing bowl, whisk together the milk and sugar until the sugar dissolves, about 1 minute.
  2. Add the 3 eggs to the milk mixture.
  3. Whisk the egg mixture until well blended, about 2 minutes.
  4. Heat a nonstick skillet or griddle over medium heat.
  5. Lightly coat the skillet with nonstick cooking spray.
  6. Dip a bread slice into the egg mixture, coating both sides briefly. Do not soak.
  7. Place the dipped bread slice onto the hot skillet.
  8. Repeat dipping and placing bread slices until the skillet is full (a household skillet holds about 2-3 slices at a time, so cook in batches).
  9. Cook the bread slices for about 1.5 minutes, until golden brown on the bottom.
  10. Flip each slice.
  11. Cook for about 1.5 minutes on the second side, until golden brown and the egg coating reaches an internal temperature of 145°F for at least 15 seconds.
  12. Remove the cooked bread slices from the skillet to a plate.
  13. Lightly re-coat the skillet with nonstick cooking spray.
  14. Repeat the dipping, cooking, and removing with any remaining bread slices, about 1.5 minutes per side, until golden brown and the egg coating reaches 145 F.
  15. Serve immediately.
