Ingredients

  • 1 teaspoon baking powder
  • 1 large egg
  • 1 cup milk
  • ½ cup granola cereal
  • ½ teaspoon ground cinnamon
  • ¼ cup maple syrup
  • 2 cups old-fashioned oats
  • 1 orange
  • ¼ teaspoon salt
  • 1 large sweet potato
  • 1 teaspoon vanilla extract
  • ¼ cup walnuts
  • 1 tablespoon wheat germ

Method

  1. Peel the sweet potato and cut it into 1-inch cubes.
  2. Boil the sweet potato cubes in a saucepan of water until fork-tender, about 15 to 20 minutes.
  3. Drain the cooked sweet potato cubes.
  4. Mash the drained sweet potato until smooth.
  5. In a medium bowl, combine oats, granola cereal, baking powder, wheat germ, cinnamon and salt.
  6. Set aside.
  7. In another bowl, whisk syrup, milk, egg, vanilla extract, juice of ½ the orange, zest of the entire orange, and sweet potatoes.
  8. Stir the mashed sweet potato into the wet ingredients.
  9. Pour wet ingredients into dry ingredients and mix well.
  10. Spray an 8 x 8-inch baking dish with cooking spray and slide in sweet potato mixture.
  11. Bake in a preheated oven at 375°F for 15 minutes.
  12. Toss walnuts on top.
  13. Bake another 5-8 minutes.
  14. Allow to cool at least 10-15 minutes before cutting.
