- •1 large egg
- •1 cup milk

Method

- Peel the sweet potato and cut it into 1-inch cubes.
- Boil the sweet potato cubes in a saucepan of water until fork-tender, about 15 to 20 minutes.
- Drain the cooked sweet potato cubes.
- Mash the drained sweet potato until smooth.
- In a medium bowl, combine oats, granola cereal, baking powder, wheat germ, cinnamon and salt.
- Set aside.
- In another bowl, whisk syrup, milk, egg, vanilla extract, juice of ½ the orange, zest of the entire orange, and sweet potatoes.
- Stir the mashed sweet potato into the wet ingredients.
- Pour wet ingredients into dry ingredients and mix well.
- Spray an 8 x 8-inch baking dish with cooking spray and slide in sweet potato mixture.
- Bake in a preheated oven at 375°F for 15 minutes.
- Toss walnuts on top.
- Bake another 5-8 minutes.
- Allow to cool at least 10-15 minutes before cutting.
