Ingredients

  • ½ cup carrot
  • 2 eggs
  • 1 tablespoon granulated sugar
  • 1 apple
  • 1 teaspoon ground white pepper
  • ½ cup jicama
  • 1 lime
  • 4 tablespoons olive oil
  • 2 oranges
  • 1 head romaine lettuce
  • sea salt
  • 1 tomato

Method

  1. Place the 2 eggs in a single layer in a small saucepan.
  2. Add enough cold water to cover the eggs by 1 inch.
  3. Bring the water with the eggs to a full boil over high heat.
  4. Remove the pan of eggs from the heat as soon as the water boils.
  5. Cover the pan of eggs with a tight-fitting lid.
  6. Let the eggs stand in the covered pan for 15 minutes.
  7. Transfer the eggs to a bowl of ice water with a slotted spoon.
  8. Let the eggs cool in the ice water for 10 minutes.
  9. Peel the cooled eggs.
  10. Wash and cut all fruits and vegetables, drain and set aside.
  11. Wash and cut fresh oranges and lime into halve.
  12. Squish into a small bowl.
  13. Mix with sea salt, sugar, olive oil and ground white pepper.
  14. Mix well.
  15. Check the seasoning.
  16. Drizzle the orange juice mixture over your green salad.
  17. Slice the peeled hard-boiled eggs crosswise into rounds.
  18. Add hard boiled egg over the salad and serve.
