  • 12 ounces beef steak
  • 4 cups broccoli florets
  • 1 tablespoon coconut oil
  • ¾ cup chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin
  • ½ teaspoon sesame oil
  • 1 tablespoon sugar
  • 2 teaspoons asian chili sauce
  • 2 cups brown rice

Method

  1. Cook 2 cups brown rice in a covered saucepan with 4 cups of water over low heat until tender and the water is absorbed, 45 to 50 minutes.
  2. Combine chicken broth, cornstarch, soy sauce, rice vinegar, Mirin, sesame oil, sugar and Asian chili sauce in a small bowl.
  3. Preheat a non-stick skillet over medium high heat with ½ tablespoon coconut oil.
  4. Add beef.
  5. Stir fry until beef is cooked through, 3-4 minutes.
  6. Remove from pan.
  7. Add remaining coconut oil.
  8. Saute broccoli for 3-4 minutes until crisp-tender.
  9. Add chicken broth or water as needed to keep pan from becoming too dry.
  10. Add beef and sauce into the pan with the broccoli.
  11. Stir until sauce thickens, 4-5 minutes.
  12. Serve over rice.
