  1. Preheat your oven to 200 degrees Celsius / 390 degrees Fahrenheit.
  2. Bring a pot of water to a boil.
  3. Add the peeled and chopped sweet potatoes and some salt.
  4. Bring to a boil again.
  5. Cook until soft.
  6. Bring another pan of water to a boil.
  7. Add the peas and some salt.
  8. Cook until the peas are done.
  9. Meanwhile wash and dry the salmon filets.
  10. Place them in a lightly buttered baking tin.
  11. Mix the zest of the lime, 2 tablespoons butter, the roughly ground pepper and the breadcrumbs together.
  12. Divide this mixture between the 4 salmon filets.
  13. Press it down on each piece.
  14. Cut the lime into wedges.
  15. Arrange the wedges in the tin between the fish filets.
  16. Bake the salmon for 8 to 10 minutes until the breadcrumb mixture turns golden and the fish is cooked through. Be careful not to overcook the fish.
  17. While the fish is in the oven drain the sweet potatoes.
  18. Add them back to the pan.
  19. Add one extra knob of butter.
  20. Mash to your desired texture.
  21. Adjust the taste with salt and pepper.
  22. Stir in some chopped fresh thyme if you like.
  23. Drain the peas.
  24. Rinse under cold water.
  25. Place them in a warm serving bowl.
  26. Add some chopped mint and the second butter knob.
  27. Add salt and pepper to taste.
  28. Serve immediately.
